  • Wax gourd (Winter melon)
    200 g
  • Ginger

  • Water
    400 ml
  • Japanese style granulated soup stock
    1 tsp
  • Light soy sauce
    2 tsp
  • Salt
    a pinch
  • Tororo kombu
    4 g
  • Young green onion (Konegi)
    4 g

How to make

  1. 1. Remove the seeds and the white pith from the wax gourd (winter melon), peel the skin, and cut it into 0.4-inch cubes. Peel and grate the ginger.
  2. 2. Add the winter melon, ginger, and water to a pot and simmer over medium heat for about 10 minutes.
  3. 3. Once winter melon is cooked through, add Japanese-style granulated soup stock, light soy sauce, and salt and bring it to a boil.
  4. 4. Mash the Step 3 winter melon roughly with a fork.
  5. 5. Serve it in bowls, top it with tororo kombu, sprinkle with young green onion (konegi), and it's ready to serve.
