  • Silk tofu
    350 g
  • (A)Soy sauce
    2 tbsp
  • (A)Sake
    2 tbsp
  • (A)Sugar
    1 tsp
  • (A)Grated ginger
    1/2 tsp
  • (A)Grated garlic
    1/2 tsp
  • Starch
    3 tbsp
  • Frying oil
    as needed
  • Garnish
  • Lemon
    as needed
  • Parsley
    as needed

How to make

  1. 1. Cut silk tofu into bite-sized pieces. Freeze in the freezer for about 2 hours, then place in refrigerator to thaw.
  2. 2. Place Step 1 on top of a paper towel and gently press it with your hands to remove the liquid.
  3. 3. Mix (A) in a bowl, add Step 2, and marinate for about 15 minutes.
  4. 4. Lightly squeeze out the liquid and coat it with starch.
  5. 5. Pour 1-inch depth of frying oil into a pot, heat to 180℃ (360°F), and add Step 3. Deep-fry for about 3 minutes until the surface turns golden brown, then drain the oil.
  6. 6. Arrange it on a plate, serve with garnish, and it's ready.

Tips for cooking

Please adjust the seasoning to your liking. The finished texture will change, but you can substitute firm tofu for silk tofu.
