  • Pancake mix
    200 g
  • Matcha powder
    1.5 tbsp
  • Sugar
    1 tbsp
  • Glutinous rice flour (Shiratamako)
    80 g
  • Hot water
    90 ml
  • Milk
    150 ml
  • Eggs
    1
  • Salad oil
    1 tbsp
  • Mashed bean paste
    200 g
  • Powdered sugar
    as needed
  • Black sugar syrup
    1 tbsp

How to make

  1. 1. Add glutinous rice flour (shiratamako) in a bowl, add hot water little by little, and mix with long chopsticks each time. When everything is blended, add milk 3 at a time, and mix with a whisk each time.
  2. 2. In a separate bowl, add flour and sugar, and mix well.
  3. 3. Crack in the egg and add Step 1 little by little, mix each time.
  4. 4. Add cooking oil to a pan, spread the oil with a paper towel and, heat over low heat. Pour in one scoop of ladle of Step 3 and form a circle.
  5. 5. When the bubble starts to show, cook the back side as well, then heat over low heat until it browns and cooks through, then remove from the heat. Cook 4 slices in the same way.
  6. 6. Layer Step 5 and boiled sweet red beans (yude azuki) alternately.
  7. 7. Transfer to a plate, sprinkle with powdered sugar and black sugar syrup, and it's ready to serve.
