    400 g
  • Sushi vinegar

  • Barracuda (Dried kamasu)

  • Salad oil

  • Cucumber

  • Japanese pickled plum paste (Bainiku)
    2 tbsp
  • Roasted white sesame seeds
    1 tsp

How to make

  1. Prepare. Cut off the stem of cucumber.
  2. 1. Thinly slice the cucumber into round slices.
  3. 2. Place cooking oil on a pan, place dried barracuda (kamasu), and cook over medium heat for 5 minutes on each side. Once it has browned nicely and cooked through, remove from the heat.
  4. 3. Remove the bones and skin and break the meat.
  5. 4. Add rice and sushi vinegar in a bowl and lightly mix together, then add Step 1, 3, and Japanese pickled plum paste (bainiku) and mix together.
  6. 5. Serve on a plate, sprinkle white roasted sesame seeds, and it's ready to serve.

Tips for cooking

Please use your favorite umeboshi. Dried kamasu fish can also be grilled on a grill.
