How to make

  1. Prepare. Preheat the oven to 160°C (320°F). Remove the seeds and guts from Japanese squash and peel the skin.
  2. 1. Cut Japanese squash into bite-sized pieces. Place the squash into a heat-resistant bowl, cover with plastic wrap, and heat at 600W in a microwave for about 5~6 minutes, then sieve while hot.
  3. 2. Transfer to a bowl, add whipping cream (heavy cream) a little at a time, and mix until smooth.
  4. 3. Put eggs and sugar in another bowl, and mix well with a whisk until sugar dissolves, then add Step 2 little by little, and mix well.
  5. 4. Heat the milk in a pot over low heat until just before boiling.
  6. 5. Add Step 4 to Step 3 a little at a time and mix to combine, when it's mixed well, sieve it.
  7. 6. Pour into a readymade tart dough and bake in an oven at 160℃ (320°F) for 40~50 minutes. Stick a bamboo skewer in the center and if the dough doesn't stick, remove it from the oven and let it cool.
  8. 7. Add heavy cream and sugar for finishing to a bowl and whisk with a hand mixer until the mixture forms a firm peak. Place in a piping bag, squeeze out onto the surface of Step 6, and it's ready to serve.
