  • (A)Japanese sweet cooking wine (Mirin)

  • (A)Salt

  • (A)Soy sauce
    1 tsp
  • (A)Noodle soup base (Mentsuyu)

How to make

  1. Prepare. Peel daikon radish skin and set aside. Peel boiled eggs and set aside.
  2. 1. Cut daikon radish into 1-inch wide pieces and round off the corners using a peeler. Cut and separate the octopus into each foot.
  3. 2. Add dashi soup and daikon radish from Step 1 to a pot, heat over medium heat, and once it's cooked, reduce the heat to low, add octopus, and simmer for about 15 minutes.
  4. 3. When daikon radish is cooked through, add (A) and boiled eggs, cover with a lid, and simmer over low heat for about 10 to 20 minutes.
  5. 4. Season to your taste and it's ready to serve.

Tips for cooking

The heating time varies depending on the thickness of daikon radish, so please adjust as you like. The key is to simmer daikon radish and octopus together, so please do not simmer them separately. If you like, we also recommend adding fish cake (chikuwa) or similar ingredients. Please try it out!
