  • Noodle soup base (Mentsuyu)

How to make

  1. Prepare. Mix noodle soup base (tsuyu) sauce ingredients together.
  2. 1. Cut off the root of radish sprouts. Peel and grate daikon radish and drain.
  3. 2. Boil water in a pot, add pork belly, and cook for about 2 minutes until heated through. Drain, cool under running water, and drain. Transfer to a bowl, add salt and sesame oil, and mix together.
  4. 3. Boil water in a pot, boil somen (thin wheat noodles) according to the directions on the package, drain, and cool in iced water.
