  • Starch

  • Cabbage
    20 g
  • Japanese leek
    1/4
  • (A)Grated garlic
    1/4 tsp
  • (A)Sesame oil
    1 tsp
  • (B)Water
    300 ml
  • (B)Japanese style granulated soup stock
    1 tsp
  • (B)Cooking sake
    2 tbsp
  • (C)Miso
    1.5 tbsp
  • (C)Soy sauce
    1 tsp
  • Cayenne pepper (powder)
    as needed

How to make

  1. 1. Boil udon noodles according to the package description and drain the water.
  2. 2. Cut the cabbage into bite-sized pieces.
  3. 3. Mince Japanese leek.
  4. 4. Cut pork loin into bite-sized pieces and coat with starch.
  5. 5. Add (A) to the pot and stir-fry over medium heat. When it becomes fragrant, add Step 3 and stir-fry quickly over medium heat.
  6. 6. When Japanese leek gets transparent, add (B), and when it comes to a boil, add Step 4.
  7. 7. When the pork is cooked through, remove the scum, add Step 1 and (C), and simmer over medium heat.
  8. 8. Once the flavors have soaked into udon noodles, add Step 2, cook for about 2 minutes over medium heat until the cabbage is tender, and remove from the heat.
  9. 9. Sprinkle with cayenne pepper (powder) to your taste and it's ready to serve.

Tips for cooking

Instead of udon noodles, you can add flat wide udon noodles (kishimen noodles) or rice cake. When simmering with udon noodles, be careful not to let it burn.
