Ingredients
4 pieces (diameter 3-inch× 2-inch cocotte)

  • Milk
    150 ml
  • Whipping cream (Heavy cream)
    100 ml
  • Sugar
    20 g
  • Egg yolk
    2
  • Vanilla essence
    2 drop(s)
  • Caramel Sauce
  • Sugar
    100 g
  • Water
    1 tbsp
  • Boiling water
    1 tbsp
  • Hot water
    as needed

How to make

  1. Prepare. Pour hot water into the bottom of the steamer until it reaches half of the tier and pre-boil. Wrap cotton cloth (sarashi) on the lid of a steamer.
  2. 1. Make the caramel sauce. Heat the sugar and water in a pot over medium heat, and when it turns dark brown, stir in boiling water and pour into cocotte.
  3. 2. Heat the milk and whipping cream (heavy cream) in another pot over low heat, remove from the heat just before boiling, and add the sugar to dissolve.
  4. 3. Add egg yolks to a bowl and mix with a whisk, then add Step 2 a little at a time. Mix in the vanilla extract, strain through a tea strainer, and pour into Step 1 cocotte, then cover with aluminum foil.
  5. 4. Place Step 3 on the upper of a steamer with the water boiling, cover with a lid, and steam over low heat for about 30 minutes. When the surface has set, remove it from heat.
  6. 5. Cool, chill in the refrigerator for 1 hour, and it's ready to serve.

Tips for cooking

This time we use a common stainless steamer. If there is too much hot water, the hot water will spill on the food during heating, and if it is too little, the food will be cooked without water. To avoid it, be sure to add about 50~70% of hot water, and check the amount of hot water occasionally. This time, we put a cotton cloth (sarashi) around the lid to prevent water droplets from dripping down. If you make it with a gas fire, there is a risk of catching fire when sarashi hangs down, so be sure not to let it hang down by tying it. Also, be careful not to let the fire protrude from the bottom of the steamer, and keep an eye on it while it is heating.
