  • Wax gourd (Winter melon)
    150 g
  • Deep-fried thick tofu (Atsuage)
    100 g
  • Water
    400 ml
  • Miso
    1.5 tbsp
  • Japanese style granulated soup stock
    1 tsp
  • Toppings
  • Young green onion (Konegi)
    as needed

How to make

  1. Prepare. Remove the wax gourd (winter melon) cotton and peel the skin. Remove the excess oil from deep-fried thick tofu (atsuage) with a paper towel.
  2. 1. Cut winter melon into 0.8-inch cubes.
  3. 2. Cut atsuage in half and cut it into 0.4-inch pieces.
  4. 3. Add Step 1, 2, water, and Japanese style granulated soup stock in a pot over medium heat. When it boils, reduce the heat to low and cook it for about 10 minutes.
  5. 4. When the winter melons have softened, add the miso over low heat, mix it together, and remove from the heat when the taste is fully blended.
  6. 5. Serve in a bowl, sprinkle young green onion (konegi), and it is ready to serve.

Tips for cooking

Please use the kind of miso you like. You can substitute Japanese leek for konegi. You can substitute thin fried tofu (abura-age) for atsuage.
