A simple and easy to understand recipe video shows how to make Yokote Yakisoba - Akita’s Street Food Gourmet.
It is a famous street food in Yokote City, Akita Prefecture, and is also one of the three major Japanese stir-fried noodles (yakisoba) in Japan. It features the cabbage, the ground pork, and a one-sided cooked soft-boiled egg. You might want to eat with an extra amount of sauce to enjoy like the locals. Please try recreating it at home.

  • Stir fry noodles (Yakisoba)

  • Ground pork
    60 g
  • Cabbage
    50 g
  • Bean sprouts
    50 g
  • (A)Japanese worcestershire sauce
    2 tbsp
  • (A)Okonomiyaki sauce
    1 tbsp
  • Eggs
    1
  • Salad oil
    1 tbsp
  • Pickled sliced vegetables (Fukujinzuke)
    20 g

How to make

  1. 1. Remove the root hair from the bean sprouts. Roughly chop the cabbage.
  2. 2. Heat up the pan over medium heat, put in cooking oil, put in the egg, and cook. When the egg white is set and the yolks are half-cooked, take it out.
  3. 3. Put the ground pork and Step 1 in the same pan and stir-fry over medium heat.
  4. 4. When the ground pork is cooked through, add Japanese stir-fried noodles (yakisoba) and stir-fry over medium heat while loosening the noodles. When the noodles are loosened and evenly mixed, add ingredient (A) and stir-fry to combine well.
  5. 5. When the flavors are fully blended, remove it from the heat, place it on a plate, top with Step 2, garnish with pickled sliced vegetables (fukujinzuke), and it's ready to serve.

Tips for cooking

Please adjust the amount of salt to your liking. We used steamed noodles instead of boiled noodles which the locals use. For senior citizens, children under the age of 2, pregnant women, and individuals with weakened immune systems, please avoid eating raw eggs.
