Ingredients

  • Japanese mustard spinach
    300 g
  • Spicy pollack roe
    100 g
  • Semi-dried young sardines (chirimenjako)
    30 g
  • Sesame oil
    1 tbsp

How to make

  1. Prepare. Remove the thin skin of spicy pollack/cod roes (mentaiko).
  2. 1. Cut off the base of Japanese mustard spinach and cut into 0.2-inch wide pieces.
  3. 2. Add sesame oil to the heated pan over medium heat and stir-fry mentaiko and Step 1.
  4. 3. When Japanese mustard spinach has softened, add dried young sardines and stir-fry over medium heat for about 1 minute until the flavors have blended, then remove from the heat.
  5. 4. Transfer to a bowl and it's ready to serve.

Tips for cooking

If you are not used to spiciness, you can substitute salted pollack/cod roe (tarako) for mentaiko and enjoy it. Please adjust the saltiness by adding salt to your liking.
