  • Pork shoulder

  • Silk tofu
    200 g
  • Mizuna mustard greens
    50 g
  • Carrot
    50 g
  • Japanese leek
    1/2
  • Shiitake mushroom
    4
  • Dashi
  • Water
    1000 ml
  • Kelp (Kombu)
    10 g
  • Ponzu sauce
    50 ml
  • Young green onion (Konegi)
    as needed

How to make

  1. Prepare. Cut off the stem of shiitake mushrooms. Peel carrots. Cut off the base of mizuna mustard greens.
  2. 1. Put dashi soup ingredients in a pot and rest for 30 minutes.
  3. 2. Cut mizuna mustard greens into 2-inch wide pieces. Cut carrot into strips. Cut Japanese leek thinly and diagonally. Cut silk tofu into 4 equal pieces and plate them.
  4. 3. Heat Step 1 over low heat until just before boiling, then remove kelp (kombu).
  5. 4. When it boils, turn the heat down to low, add and dip pork shoulder at a time, and when they are cooked through, it's ready. Dip them in ponzu sauce with konegi and enjoy.

Tips for cooking

You can also substitute your favorite parts for pork shoulder. Please use any vegetables you like. Remove scum whenever it comes out.
