Ingredients

  • Thin fried tofu (Abura-age)
    1 sheets
  • Onion
    1/2
  • Water
    350 ml
  • Japanese style granulated soup stock
    1 tsp
  • Miso
    2 tbsp
  • Young green onion (Konegi)
    as needed

How to make

  1. Prepare. Remove excess oil from aburaage by kitchen paper or immersing it in boiled water.
  2. 1. Cut the abura-age (fried tofu) into 3 equal pieces and cut it into 0.4-inch wide. Thinly slice the onion 0.2 inch wide in the direction of the fiber.
  3. 2. Add water, Japanese-style granulated soup stock, and Step 1 into a pot and heat over medium heat.
  4. 3. When onions get soft, melt the miso, bring it to a boil, and remove it from the heat.
  5. 4. Serve in a bowl, sprinkle konegi (young green onion) and serve.

Tips for cooking

Please adjust the amount of salt to your taste. This recipe uses Japanese style granulated soup stock, but can also use Ichiban-dashi (first dashi) alternatively.
