Here is our standard fried dashi tofu (agedashi-tofu). Agedashi-tofu, which has tofu that is lightly coated with a batter and has a warm and crispy texture, and noodle soup (tsuyu) that has the kick of dashi (Japanese soup stock) soup, is irresistible. Ingredients

  • Firm tofu
    300 g
  • (A)Starch
    1 tbsp
  • (A)Cake flour (Pastry flour)
    1 tbsp
  • Frying oil
    as needed
  • Noodle Soup
  • Water
    200 ml
  • Soy sauce
    3 tbsp
  • Japanese sweet cooking wine (Mirin)
    1 tbsp
  • Japanese style granulated soup stock
    1 tsp
  • Grated daikon radish
    50 g
  • Grated ginger
    1 tsp
  • Young green onion (Konegi)
    as needed

How to make

  1. 1. Cut the firm tofu into 6 equal pieces and pat dry with a paper towel.
  2. 2. Add the ingredient (A) to a tray, mix, and coat Step 1 evenly, then remove the excess powder.
  3. 3. Pour 1-inch depth of frying oil into a pot, heat to 160℃ (320°F), and add Step 2. Deep-fry for about 3 minutes until the surface becomes crispy, then drain the oil.
  4. 4. Add the noodle soup (tsuyu) sauce ingredients to a pot, bring to a boil over medium heat, and remove it from the heat.
  5. 5. Plate Step 3 on a bowl and pour in Step 4. Top with the grated daikon radish and the grated ginger, sprinkle young green onion (konegi), and it’s ready to serve.

Tips for cooking

Please adjust the amount of seasoning to your liking. You can make it in silk tofu instead of firm tofu.
