How to make

  1. Prepare. Remove the potato eyes and peel the potatoes. Peel the carrot.
  2. 1. Cut the potatoes into bite-sized pieces. Chop the carrot into chunks.
  3. 2. Grate onion.
  4. 3. Cut beef shank into bite-sized pieces.
  5. 4. Add Step 2, 3, and red wine into a zipper bag and rub well, marinate in a refrigerator for 1 hour, then separate marinade and the beef shank.
  6. 5. Coat Step 4 shanks with cake flour (pastry flour).
  7. 6. Add salted butter in a pot over medium heat, add Step 5, and when it browns entirely, add water and Step 4 marinade, cover with a lid, and simmer over medium heat for 2 hours.
  8. 7. When beef shank has tendered, add Step 1, demi-glace sauce, and ketchup, and simmer over low heat for about 30 minutes. When the potatoes have softened, remove from the heat.
  9. 8. Serve in a bowl, garnish with watercress, and it's ready to serve.

Tips for cooking

The longer the marinating time and the simmering time, the more tender it will be. When the liquid is running low during simmering, add more water to adjust. This recipe uses red wine. Depending on the heating condition, alcohol may contain, so please be careful if you are a child, can't drink much alcohol, pregnant or breastfeeding. Also, please refrain from consuming alcohol when you're driving, playing sports or taking a bath. The cooking time of Step 7 depends on the size of the ingredients, so please check how well it cooks and adjust the cooking time accordingly. You can shorten the cooking time by cutting the potatoes and carrots into smaller pieces or heating them in the microwave before simmering.
