  • Hot water
    1000 ml
  • Cooking sake
    1 tbsp

  • Cooking sake
    2 tbsp
  • Japanese sweet cooking wine (Mirin)
    2 tbsp
  • Soy sauce
    2 tbsp
  • Sugar
    1 tsp
  • Salad oil
    1 tsp

How to make

  1. 1. Add the sauce ingredients in a bowl and mix together.
  2. 2. Add cooking sake and chicken skins in a pot of boiling water, boil over medium heat for about 5 minutes, wash with running water, and drain.
  3. 3. Cut into bite-sized pieces and thread into bamboo skewers.
  4. 4. Place cooking oil on a pan and align Step 3, then cook over medium heat for about 6 minutes until both sides are golden brown.
  5. 5. Reduce the heat to low, add Step 1, and when the sauce has thickened and coated well, remove from the heat.
  6. 6. Transfer to a plate and it's ready to serve.

Tips for cooking

Boiling chicken skin once will remove the odor and greasiness. The sauce burns easily when heated, so please be careful.
