Thin Fried Tofu (Abura-Age) & Green Onions Miso Soup - Recipe Video

A simple and easy to understand recipe video shows how to make Thin Fried Tofu (Abura-Age) & Green Onions Miso Soup.
This miso soup is carefully made from dashi (Japanese soup stock). You might think that making dashi is a lot of work and difficult, but it is delicious and easy with small dried sardines dashi. The simple small dried sardines dashi is a warm and comforting dish. Please try making it with your favorite ingredients.

Ingredients

  • Water
    400 ml
  • Small dried sardines
    10 g
  • Thin fried tofu (Abura-age)
    1/2 sheets
  • Miso
    2 tbsp
  • Japanese leek
    10 cm

How to make

  1. 1. Remove the small dried sardines' head, split them in half, and remove the belly cap.
  2. 2. Add some water and Step 1 to a pot and leave it for about 30 minutes.
  3. 3. Cut the thin fried tofu (abura-age) in half lengthwise and cut it to 0.4-inch width.
  4. 4. Slice thinly the Japanese leek.
  5. 5. Heat Step 2 over low heat. When it starts to boil, remove the scum and simmer it over low heat for about 5 minutes, then remove the small dried sardines.
  6. 6. Add Step 3 and bring it to a boil, then dissolve in the miso and remove it from the heat.
  7. 7. Serve in bowls, add Step 4 and it's ready to serve.

Tips for cooking

Please adjust the amount of miso to your liking. If you boil small dried sardines for a long time, they will have an astringent taste, so please be careful with the heat level. You can also eat small dried sardines as an ingredient without taking it out.
