  • Cabbage

  • Japanese leek
    1/2
  • Beaten eggs

  • Red pickled ginger
    30 g
  • (A)Salt and pepper mix
    a pinch
  • (A)Noodle soup base (Mentsuyu)
    1 tbsp
  • (A)Water
    1 tbsp
  • Salad oil
    1 tbsp

  • bonito flakes
    2 g
  • Dried green seaweed flakes (Aonori)
    as needed
  • Japanese Mayonnaise
    1 tbsp
  • Okonomiyaki sauce
    1 tbsp

How to make

  1. 1. Slice cabbage into thin strips. Cut Japanese leeks into thin rounds.
  2. 2. In a bowl, add Step 1, red pickled ginger, (A) and beaten egg and mix well.
  3. 3. Put cooking oil in a Japanese rolled omelet (tamagoyaki) pan, add Step 2, and fry over medium heat. When cooked through and golden brown on both sides, remove from the heat.
  4. 4. Cut into bite-size pieces and arrange on a plate. Sprinkle with toppings, serve with okonomiyaki sauce, and it's ready to serve.

Tips for cooking

The dough is seasoned, so please pour the sauce to your taste. If you slice the cabbage and Japanese leek finely, it will be easier to mix with the egg mixture.
