  • Japanese yam (Nagaimo)

  • Thin fried tofu (Abura-age)

  • Japanese ginger (Myoga)

  • (A)Water
    400 ml
  • (A)Japanese style granulated soup stock
    1 tsp
  • Miso
    1.5 tbsp

How to make

  1. 1. Peel and grate the Japanese yam (nagaimo).
  2. 2. Cut calyx for the okras and slice them thinly. Cut thin fried tofu (abura-age) in half and cut it into 0.2-inch width.
  3. 3. Slice thinly the the Japanese ginger (myoga).
  4. 4. Put ingredient (A) in a pot over medium heat, and when it boils, put Step 2 and turn the heat down to low.
  5. 5. Dissolve the miso, place it in bowls, top it with Step 1 and 3, and it's ready.

Tips for cooking

We didn't roll okras on a chopping board to save time, but you can roll it if you like. Please use your favorite miso. The saltiness varies depending on the miso, so please adjust according to your preference. We didn't remove the oil from thin fried tofu (abura-age), but please remove the oil if you are concerned.
