  • Chicken breast
    300 g
  • Japanese picked plum (Umeboshi)
    3
  • Green shiso leaves
    5 sheets
  • (A)Sake
    1 tbsp
  • (A)Salad oil
    1 tbsp
  • (A)Sugar
    1/2 tbsp
  • (B)Starch
    6 tbsp
  • (B)Roasted white sesame seeds
    1 tbsp
  • Frying oil
    as needed
  • Lettuce
    as needed

How to make

  1. Prepare. Remove the stems from green shiso leaves.
  2. 1. Cut green shiso leaves in half lengthwise and slice them thinly. Remove the seeds from Japanese picked plum (umeboshi) and pound them with a knife to a paste. Cut chicken breast into bite-sized pieces.
  3. 2. Add Step 1 and (A) in a bowl, mix well as you rub, and marinate in a refrigerator for about 30 minutes.
  4. 3. Add (B) and mix evenly overall.
  5. 4. Pour 1-inch depth of frying oil into a pot, heat to 180℃ (360°F), add Step 3, and deep-fry for about 5 minutes until golden brown and cooked through, then drain the oil.
  6. 5. Lay the lettuce on a plate, arrange Step 4 and it's ready to serve.

Tips for cooking

By rubbing cooking oil, sugar, and other seasonings into the chicken breast, the texture becomes soft and moist. Depending on the salt content of umeboshi, it may have a mild taste. Please adjust the amount of salt to your liking. Adding about 1~2 teaspoon of soy sauce will increase the flavor and make it delicious.
