This is an introduction to inari sushi using matsumae pickles (matumaezuke). Matsumaezuke which has plenty of umami goes well with juicy inari sushi. White roasted sesame seeds are a nice accent. It is easy to make because it uses commercially available oinari-san skin. Please try it if you have some matsumaezuke at your home.

Ingredients

  • Thin fried tofu (Inarizushi skin)
    8 sheets
  • Rice
    200 g
  • (A)Vinegar
    1 tbsp
  • (A)Salt
    2 three finger pinches
  • Matsumae pickles (Matsumaezuke)
    100 g
  • Ginger
    10 g
  • Roasted white sesame seeds
    1 tsp
  • Sweet pickled fresh seasonal ginger
    30 g

How to make

  1. Prepare. Peel off the ginger skin.
  2. 1. Grate the ginger.
  3. 2. Add the rice and ingredient (A) to a bowl, mix in a slicing motion with a rice scoop, and let it cool.
  4. 3. Add matsumae pickles (matsumaezuke), Step 1, and white roasted sesame seeds, mix, divide into 8 equal parts, and stuff it into thin fried tofu (inarizushi skin).
  5. 4. Serve it on a plate, garnish with sweet pickled fresh seasonal ginger, and it's ready to serve.

Tips for cooking

Please adjust the amount of salt to your taste. We didn't use sugar for sushi rice this time, but please add it to your taste if you like.
