  • Shrimp
    100 g
  • Hot water
    300 ml
  • Cooking sake
    1 tbsp
  • (A)Miso
    1 tbsp
  • (A)Sesame oil
    1 tbsp
  • (A)Sugar
    1/2 tbsp
  • (A)Soy sauce
    1 tsp
  • (A)Chicken soup stock (powder, cube, liquid)
    1/4 tsp
  • Salted butter
    15 g
  • Young green onion (Konegi)
    as needed

How to make

  1. 1. Separate the shrimps into the shell and the flesh. Make a cut on the back of the flesh and remove the back cotton.
  2. 2. Bring a pot of water to a boil, then add cooking sake and Step 1 flesh over medium heat to boil until the shrimp change color.
  3. 3. Add the salted butter to a pan, reduce the heat to medium, then add Step 1 shells and stir-fry. When the shells change color, add Step 2 cooking water and the ingredient (A).
  4. 4. Once it has boiled down to about half the amount, turn off the heat and strain it through a strainer.
  5. 5. Bring the water to a boil in a pot and add the Chinese noodles. After boiling the noodles according to the package directions, place them in a strainer and rinse them under running water to drain.
  6. 6. Place Step 4 and 5 in a bowl, top it with Step 2 shrimp and young green onion (konegi), and it's ready to serve.

Tips for cooking

Please adjust the amount of miso or chicken soup stock as you like. This time we are using the shelled whiteleg shrimps, but you can also make it deliciously with shrimps with the head attached.
