We cooked a Japanese style omelet rice using Japanese leek and lotus roots. The chewy texture of these ingredients goes well with miso flavored rice. With the addition of half cooked eggs, the umami flavor blends together. Adding some vegetables of your choice will allow you to modify the recipe further. We strongly recommend it!

    200 g
  • Lotus root
    150 g
  • Japanese leek
    1/2

  • Cooking sake
    1 tbsp
  • Sugar
    1/2 tbsp
  • Soy sauce
    1/2 tbsp
  • Sesame oil
    1/2 tbsp
  • Eggs
    2
  • (A)Salt
    2 three finger pinches
  • (A)Black pepper
    2 three finger pinches
  • Salad oil
    1 tsp
  • Nori seaweed
    as needed

How to make

  1. Prepare. Peel the lotus root skin.
  2. 1. Chop the Japanese leeks.
  3. 2. Chop the lotus roots.
  4. 3. Beat the eggs in a bowl, add ingredient (A) and mix them well.
  5. 4. In a separate bowl, add the seasoning ingredients and mix well.
  6. 5. Heat sesame oil in a frying pan over medium heat, add ingredients made in Step 2, and stir-fry over medium heat for about 5 minutes.
  7. 6. Add ingredients made in Step 1. Add the rice when the oil is evenly spread. Stir-fry over medium heat while mixing the rice. When mixing them, try to do it as if you're cutting the rice.
  8. 7. Pour in the ingredients from Step 4 in a circle, stir fry over medium heat until everything is mixed, then remove it from the heat.
  9. 8. Heat another frying pan over medium heat, add cooking oil, add ingredients from Step 3, and mix in a big circle with a wooden spatula. Turn off the heat when half-cooked.
  10. 9. Put ingredients from Step 7 on a plate, place the egg made in Step 8 on top, and finally sprinkle some seaweed and it's done!

Tips for cooking

Please adjust the amount of salt to your taste. Since the salt content varies depending on the manufacturer, please adjust the taste to your liking. For senior citizens, children under the age of 2, pregnant women, and individuals with weakened immune systems, please make sure that the eggs are cooked thoroughly and avoid eating raw eggs.
