Here's how to make a basic Japanese pork cutlet (tonkatsu). With a little effort, the tonkatsu will become moist inside and crispy outside. Deep-fried food is a pain in the neck, but freshly deep-fried tonkatsu are very delicious, so please try making them at home.

How to make

  1. 1. Make some slits to cut the grain of the pork loin, and sprinkle with salt and pepper mix.
  2. 2. Dust cake flour (pastry flour) to it.
  3. 3. Mix the beaten egg and cooking oil in a bat, mix them, then dip Step 2 into it.
  4. 4. Coat the breadcrumbs all over.
  5. 5. Pour 2-inch depth of frying oil into a pot, heat to 150℃ (302°F), add Step 4, dee-fry for about 4 minutes, and remove from the heat.
  6. 6. Increase the temperature of the frying oil to 180°C (356°F), add Step 5, and deep-fry for about 2 minutes. When the inside is cooked through and becomes golden brown, drain off the oil. Place the garnish on a plate and it's ready to serve.

Tips for cooking

Please adjust the seasoning to your taste. By cutting the grain of the pork, it will keep the same shape when fried.
