This is an introduction to deep-fried tofu (agedashi tofu), which is easy to make. Agedashi tofu is cooked in an extra amount of oil, and you can make it easier than the usual agedashi tofu by using the noodle soup base (mentsuyu) sauce. You should definitely give it a try!

Ingredients

  • Firm tofu
    1 cake(s)
  • Cake flour (Pastry flour)
    3 tbsp
  • Frying oil
    as needed
  • (A)Noodle soup base (Mentsuyu, 2x concentrate [1 mentsuyu : 1 water])
    50 ml
  • (A)Water
    200 ml
  • Starch and water mixture
    1 tsp
  • Toppings
  • Grated daikon radish
    10 g
  • Young green onion (Konegi)
    as needed

How to make

  1. Prepare. Wrap the firm tofu in a paper towel, place the heavy stones on it for about 30 minutes, and drain.
  2. 1. Cut the firm tofu into 4 equal pieces.
  3. 2. Coat them with cake flour (pastry flour).
  4. 3. Pour 0.4-inch depth of frying oil into a pot and heat over medium heat. Add Step 2 and deep-fry for about 4 minutes until everything turns brown, then drain the oil.
  5. 4. Heat the ingredient (A) in a pot over medium heat. Once it comes to a boil, turn the heat down to low and add the starch and water mixture while mixing. When it thickens, remove it from the heat.
  6. 5. Place Step 3 in a bowl, pour over Step 4, top with the toppings, and it’s ready to serve.

Tips for cooking

Please mix the starch with water at a ratio of 1:2. Adjust the amount accordingly to the thickness of your liking.
