For Doll's festival (hinamatsuri, see this page for more info) or celebrations! This is a simple yet gorgeous sushi cake. After making sushi rice, all you have to do is to put it into a mold! Have fun decorating with the ingredients of your choice. The Japanese sausage around the cake makes it look like a tart and is cute.

Ingredients
1 pan (internal diameter 6-inch)

  • Rice

  • (A)Vinegar

  • Dried green seaweed flakes (Aonori)
    2 tbsp
  • Sweet pink fish flakes (Sakura denbu)
    4 tbsp
  • Shredded egg omelet (Kinshi tamago)

  • Tuna
    20 g
  • Salmon
    20 g
  • Salmon roe (Ikura)

  • Cucumber

  • Squid

How to make

  1. Prepare. Boil the Japanese sausage in hot water.
  2. 1. Add ingredient (A) to the rice, mix well, and divide equally into 3 parts. Add sweet pink fish flakes (sakura denbu) to one of them and dried green seaweed flakes (aonori) to another one, and mix well.
  3. 2. Cover the cake pan with plastic wrap, spread shredded egg omelet (kinshi tamago), then spread and pile in the order of sakura denbu from Step 1 → white rice → dried green seaweed flakes (aonori) rice.
  4. 3. Slice the cucumber with a peeler and make a rose shape with salmon and tuna. Cut the squid into small pieces and cut the Japanese sausage in half both vertically and horizontally.
  5. 4. Remove Step 2 from the cake pan and decorate the sausage around it.
  6. 5. Top Step 4 with Step 3 and salmon roe and it's ready to serve.

Tips for cooking

Let sushi rice cool down, then spread it on the cake pan. Also, if you have enough time, it'll be great to rest it for about 20 minutes in a refrigerator before removing it from the mold. You can change the ingredients used for decoration to your preference.
