You can easily make grilled fish with saikyo miso at home which you often see in shops. This time we marinated salmon, but you can also make various arrangements such as marinating seasonal fish. Please give it a try.

1 serving

  • Sake
    1 slice(s)
  • Salt
    a pinch
  • (A)White miso (Shiro miso)
    50 g
  • (A)Cooking sake
    1 tbsp
  • (A)Japanese sweet cooking wine (Mirin)
    1 tbsp
  • Salad oil
    1 tsp
  • Garnish
  • Sweet pickled ginger
    as needed

How to make

  1. 1. Sprinkle salt on both sides of the salmon and leave for 5 minutes.
  2. 2. Put ingredient (A) in a bowl and mix with a whisk.
  3. 3. Wipe off the moisture from Step 1 with a paper towel, put in Step 2, cover with plastic wrap, put in the refrigerator and marinate for about 30 minutes.
  4. 4. Add cooking oil to a pan heated over medium heat, add Step 3 with the excess miso removed, and cook. Once browned, flip it, reduce the heat to low, and cook until heated through, then remove from the heat.
  5. 5. Serve Step 4 in a bowl, garnish with sweet pickled ginger, and it is ready.

Tips for cooking

Sprinkle salt on the salmon before soaking it in miso to remove the fishy smell. Wipe off any excess moisture. Miso burns easily, so remove excess miso and bake it.
