A simple and easy to understand recipe video shows how to make Hearty Amount of Mushroom Meat Roll, Sesame Soy Milk Shabu-Shabu.
This is an unusual shabu-shabu recipe that rolls a lot of mushrooms such as enoki mushroom or eryngii mushroom in a juicy pork belly. The soup with soy milk and sesame is also rich and delicious. After finishing the pot, we recommend adding seasonings to make rice porridge with it.

  • Maitake mushroom
    100 g
  • Eryngii mushroom
    100 g
  • Enoki mushroom
    100 g
  • Soup
  • Plain soymilk
    400 ml
  • Water
    400 ml
  • (A)White sesame paste
    80 g
  • (A)Japanese style granulated soup stock
    1 tbsp
  • Roasted white sesame seeds
    as needed
  • Young green onion (Konegi)
    as needed
  • Sauce
  • Plain soymilk
    50 ml
  • Noodle soup base (Mentsuyu)
    50 ml
  • White sesame paste
    50 g
  • White ground sesame
    1 tbsp

How to make

  1. 1. Cut off the hard tip of maitake mushrooms, eryngii mushrooms, and enoki mushrooms and break them with hands.
  2. 2. Roll Step 1 with pork belly into bite-sized pieces.
  3. 3. Add sauce ingredients to a bowl and mix together.
  4. 4. Add water and ingredient (A) to a clay pot and heat over high heat. Bring to a boil, then reduce the heat to low and add plain soymilk and mix. Heat until just before boiling, then sprinkle with white roasted sesame seeds and young green onion (konegi).
  5. 5. Dip Step 2 into Step 4, and when the ingredients are thoroughly cooked, it's ready. Please dip it into Step 3 to enjoy.

Tips for cooking

Please heat the mushrooms thoroughly before eating. Plain soymilk may separate when boiled, so please watch the heat level. Pork belly can also be substituted with shabu-shabu pork loin.
