  • Pork for shabu-shabu

  • Hot water
    1000 ml
  • Cooking sake
    1 tbsp
  • Coriander
    50 g
  • Red onion

  • (A)Nam pla fish sauce
    2 tbsp
  • (A)Chicken soup stock (powder, cube, liquid)
    1 tsp
  • (A)Cane sugar
    1 tsp
  • (A)Sesame oil
    1 tbsp
  • (A)Lemon juice
    1 tbsp
  • (A)Sliced Japanese chili peppers (Takanotsume)
    1 tsp
  • Lemon

How to make

  1. Prepare. Cut off the root of the coriander and set aside.
  2. 1. Cut coriander into 1-inch pieces. Slice red onion thinly.
  3. 2. Put ingredient (A) in a bowl and mix together.
  4. 3. Boil water in a pot, add cooking sake and pork belly, boil until cooked through, then soak in iced water to cool.
  5. 4. Combine drained Step 3, 1, and 2 in a separate bowl. Transfer to a plate, squeeze out the lemon, and it's ready to serve.

Tips for cooking

If you are concerned about the pungency of red onion, soak it in water for about 5 minutes, then drain it before using.
