Ingredients
1 whole cake (6-inch width x 3-inch length x 2-inch height pound mold)

  • Caramel Sauce
  • Caster sugar
    100 g
  • Water
    50 ml
  • Hot water
    30 ml
  • Pudding Mixture
  • Banana
    2
  • Eggs
    4
  • Milk
    100 ml
  • Whipping cream (Heavy cream)
    100 ml
  • Granulated Sugar
    40 g
  • Boiling water
    as needed
  • Mint
    as needed

How to make

  1. Prepare. Preheat the oven to 150°C (300°F).
  2. 1. Make the caramel. Put the water and caster sugar in a saucepan over medium heat. When the caster sugar melts and turns brown, remove from heat, add hot water, mix together, then pour into the mold.
  3. 2. Make the pudding (purin) mixture. Place all purin batter ingredients except whipping cream (heavy cream) into a blender and blend until smooth.
  4. 3. Put the heavy cream and Step 2 into a bowl and mix together.
  5. 4. Strain with a strainer and pour into Step 1.
  6. 5. Place on a deep tray and pour boiling water into the mold until it is about 1/2 the depth of the mold.
  7. 6. Bake in a hot water bath at 150°C (300°F) for 30 minutes, let it cool, and refrigerate for 60 minutes.
  8. 7. Remove from the mold, cut into desired sizes, place on a plate, and garnish with mint, then it is ready.

Tips for cooking

Please make sure to preheat the oven before baking. If the oven does not have a preheating function, set the temperature and heat for 10 minutes before baking. The strength of the heat may vary depending on the type of oven and the period of use. Please make sure to follow the recipe as a guide but adjust the baking time as needed. If it browns too much, cover it with aluminum foil.
