Braised Daikon Radish and Konjac Kinpira - Recipe Video

We used daikon radish and konjac to make a braised dish (kinpira). The umami flavor of daikon radish and the texture of konjac go well with the little spicy flavor and are delicious. This is a convenient dish that goes well with both rice and alcohol. You should definitely give it a try!

Ingredients

  • Daikon radish
    200 g
  • Konjac (Konnyaku)
    140 g
  • Salt
    1 tsp
  • Hot water
    500 ml
  • (A)Soy sauce
    1.5 tbsp
  • (A)Japanese sweet cooking wine (Mirin)
    1 tbsp
  • (A)Cooking sake
    1 tbsp
  • (A)Sugar
    1/2 tbsp
  • (A)Japanese style granulated soup stock
    1 tsp
  • Sesame oil
    1/2 tbsp
  • Roasted white sesame seeds
    1 tbsp
  • Cayenne pepper (powder)
    as needed

How to make

  1. 1. Peel off the skin of daikon radish and cut into 0.2-inch wide thin strips.
  2. 2. Cut konjac half horizontally, halve the thickness, and cut into 0.2-inch wide thin strips.
  3. 3. Add Step 2 and salt in a bowl and rub well with your hands. Put it to the boiling water in a pot, boil for about 1 minute, then drain the water with a strainer.
  4. 4. Add sesame oil to a pan over medium heat, add Step 1 and Step 3, and stir-fry for about 3 minutes over medium heat until daikon radish is cooked through.
  5. 5. Add ingredient (A), and stir-fry over medium heat until the seasonings get thickened.
  6. 6. Add white roasted sesame seeds, and when the taste is overall absorbed, turn off the heat. Transfer to a plate, sprinkle with cayenne pepper (powder), and it's ready to serve.
