  • Red pickled ginger

  • Tempura bits
    20 g
  • Batter
  • Cake flour (Pastry flour)

    100 ml
  • Beaten eggs

  • Japanese style granulated soup stock
    1 tsp
  • Salad oil
    1 tbsp
  • Toppings
  • Okonomiyaki sauce
    1 tbsp
  • Japanese Mayonnaise
    1 tbsp
  • bonito flakes
    3 g
  • Dried green seaweed flakes (Aonori)
    as needed

How to make

  1. 1. Cut off a core of cabbage and shred it. Cut an octopus into bite-size pieces.
  2. 2. Put dough ingredients into a bowl and mix until the powderiness is gone.
  3. 3. Add Step 1, red pickled ginger, and tempura bits, and mix lightly.
  4. 4. Add cooking oil to a heated pan, pour in half of Step 3, and cook over medium heat for about 3 minutes. Once browned, flip it, cover, and cook over medium heat for about 5 minutes. Cook another slice in the same way.
  5. 5. Serve on a plate, add toppings, and it's ready.

Tips for cooking

Adjust the amount of salt to your liking. If you like, you can also top it with a pork belly and grill it. We used a pan this time, but you can also make it on an electric griddle.
