  • Lettuce

  • Silk tofu

  • Enoki mushroom
    100 g
  • Water
    600 ml
  • Kelp (Kombu)
    10 g
  • Processed soy milk
    200 ml
  • (A)White ground sesame
    2 tbsp
  • (A)White sesame paste
    2 tbsp
  • (A)Miso
    1 tbsp
  • (A)Sugar
    1 tbsp
  • (A)Cooking sake
    1 tbsp
  • (A)Japanese sweet cooking wine (Mirin)
    1 tbsp
  • (A)Salt
    1 tsp
  • Chili Oil(La-yu)
    as needed

How to make

  1. 1. Put water and kelp (kombu) in a pot and leave for about 30 minutes.
  2. 2. Cut the lettuce in half and tear it into bite-size pieces with your hands.
  3. 3. Slice the Japanese leek diagonally. Cut the silk tofu into 2 equal pieces. Cut off the stems of enoki mushrooms and break them into pieces.
  4. 4. Heat Step 1 over medium heat, take out the kombu just before boiling, add the processed soy milk and ingredient (A), then simmer.
  5. 5. Heat Step 3 over medium heat, add the pork belly and Step 2, and when the meat is cooked, serve in a bowl.
  6. 6. Pour chili Oil (la-yu) and it's ready.

Tips for cooking

Adjust the seasoning to your liking. The processed soy milk may separate when boiled, so be careful with the heat.
