How to make

  1. 1. Slice the onion thinly.
  2. 2. Cut the chicken thighs into 0.4-inch cubes.
  3. 3. Add the pizza dough ingredients in order, mix until it is no longer powdery, and combine into one with your hands.
  4. 4. Place it on a well-floured board and knead with your hands until the surface is smooth. Place in the same bowl, cover with plastic wrap, and ferment at 40°C (105°F) for about 20 minutes using the oven's fermentation function.
  5. 5. Heat olive oil in a pan over medium heat, add Step 1 and 2, and fry for about 5 minutes until the chicken thighs are cooked through. Add ingredient (A), heat until thickened, remove from heat, and let it cool.
  6. 6. Preheat the oven to 200°C (390°F). Place Step 4 on a parchment paper and roll out with a rolling pin to a diameter of about 8-inch. Coat with the sauce from Step 5 and top with the ingredients from Step 5 and shredded pizza cheese.
  7. 7. Place on a baking tray and bake in a 200°C (390°F) oven for about 15 minutes until browned.
  8. 8. Serve in a dish, pour mayonnaise over the top, sprinkle with young green onions (konegi) and it is ready.

Tips for cooking

Adjust the amount of soy sauce to your liking. Please make sure to preheat the oven before baking. If the oven does not have a preheating function, set the temperature and heat for 10 minutes before baking. The strength of the heat may vary depending on the type of oven and the period of use. Please make sure to follow the recipe as a guide but adjust the baking time as needed. If it browns too fast, cover it with aluminum foil.
