  • Pancake mix

  • Eggs

  • Milk
    50 ml
  • Sugar
    20 g
  • Plain yogurt
    90 g
  • Ice cream
    as needed
  • Maple syrup
    as needed

How to make

  1. Prepare. Divide the egg into egg yolk and egg whites. Refrigerate the egg whites until just before use.
  2. 1. Put the egg yolk and yogurt in a bowl and mix together. When the yogurt is mixed, add the milk little by little and mix again.
  3. 2. Add the pancake mix to Step 1 and mix together.
  4. 3. Add the chilled egg whites to a separate bowl. Add the sugar in two or three batches and whip it until stiff peaks form to make meringue.
  5. 4. Add Step 3 to Step 2 in two batches and mix together.
  6. 5. Put the mold on the pan and pour Step 4. Cover and heat over low heat.
  7. 6. When fine bubbles begin to form on the surface, flip the pan over and cook for about 1 minute, then remove the pan from the heat. Remove the dough from the mold, place on a plate and it is ready. Serve with ice cream and maple syrup if you like.

Tips for cooking

When mixing the meringue, use a spatula to lightly cut the meringue so as not to break up the bubbles. Adjust the amount of sugar to your liking. Be sure to use a heat-resistant mold. We use a mold with a heat-resistant temperature of 230°C. Even if the mold is heated below the heat-resistant temperature, do not heat it for more than 20 minutes. Use a stainless steel or cast-iron pan because dry roasting in a non-stick pan may cause the fluororesin coating to peel off or generate toxic substances.
