  • Gizzard
    150 g
  • Cooking sake

  • Japanese leek

  • Japanese sweet cooking wine (Mirin)
    2 tbsp
  • Soy sauce
    2 tbsp
  • Sugar
    1 tbsp
  • Salad oil
    1 tsp
  • Green shiso leaves
    1 sheets

How to make

  1. Prepare. Trim the white stripe from gizzard.
  2. 1. Cut Japanese leek into about 0.8-inch wide pieces and make 10 equal pieces of it.
  3. 2. Add gizzard and cooking sake in a bowl, rub then rest for 5 minutes.
  4. 3. Thread in the order of Step 1 and Step 2 on bamboo skewers and sprinkle salt and pepper mix.
  5. 4. Mix the sauce ingredients in a bowl.
  6. 5. Add cooking oil to a pan. Align Step 3, turn the heat to medium, cover with a lid, and cook for 10 minutes.
  7. 6. Flip it over and cook for 5 minutes over medium heat, pour Step 4 evenly, when the taste is blended until the juices are gone, then place it on a plate which placed green shiso leaves, and it's ready to serve.

Tips for cooking
