Kansai-Style Dashi Udon Noodle (Short Video) - Recipe Video

A simple and easy to understand recipe video shows how to make Kansai-Style Dashi Udon Noodle (Short Video).
This time we simply made the dish with the Japanese pickled plum (umeboshi), the grated daikon radish, and the Kansai-style clear dashi (Japanese soup stock). Please try it at home and we hope you like it.

  • Green shiso leaves

  • Udon Dashi
  • Water
    300 ml
  • Sake
    1/2 tbsp
  • Japanese style granulated soup stock
    1 tsp
  • Light soy sauce
    1 tsp
  • Salt
    1/2 tsp

How to make

  1. Prepare. Cut off the green shiso leaf stem.
  2. 1. Peel the daikon radish, cut it into half, cut it into 0.2-inch cubes for one of them, and grate for one of them. Drain the liquid from the grated daikon radish and mix it with the diced daikon radish.
  3. 2. Add the udon noodles and dashi (broth) ingredients to the pot and bring it to a boil.
  4. 3. Add udon noodles, heat it over medium heat, and boil it as it's written on the package, then serve in a bowl.
  5. 4. Top the green shiso leaf, Japanese pickled plum (umeboshi), and Step 1.

Tips for cooking

We used the boiled noodles this time, but you can also enjoy it with the frozen noodles. Please adjust the amount of salt in the dashi (broth). We combined the diced and grated daikon radish this time to make oni-oroshi style. Oni-oroshi is a grater that can make a rough grated daikon radish.
