  • (A)Noodle soup base (Mentsuyu)

  • (A)Cooking sake
    1 tbsp
  • (A)Japanese sweet cooking wine (Mirin)

  • (A)Sugar
    1/2 tsp
  • (A)Salt
    2 three finger pinches
  • Roasted white sesame seeds
    1 tsp

How to make

  1. 1. Remove the red shiso leaf from the branch and wash well with water.
  2. 2. Coarsely chop it, sprinkle with salt for preparation, and leave it for about 5 minutes, then wash with water.
  3. 3. Squeeze Step 2 well, sprinkle it with more salt for removing the harsh taste, and leave it for about 10 minutes. Squeeze out the water and sprinkle with lemon juice.
  4. 4. Put Step 3 and Dried whitebait in a pan heated over medium heat and stir-fry.
