  • Hot water
    800 ml
  • Cold water
    1000 ml
  • Green shiso leaves
    2 sheets
  • (A)Water
    300 ml
  • (A)Japanese versatile dashi base (Shiro-dashi)
    100 ml

How to make

  1. 1. Remove the tomato stems and make a shallow cross-cut at the bottom.
  2. 2. Boil water in a pot, place Step 1 to boil. When the skin starts to crack, quickly remove it from the water and soak it in cold water. Once the tomatoes have cooled, peel off the skin.
  3. 3. Mix the ingredient (A) in a bowl and marinate Step 2. Cover with plastic wrap and chill it in the refrigerator for 2 hours until the tomatoes are cooled.
  4. 4. Cut off the green shiso leaves stem and thinly slice them.
  5. 5. Serve Step 3 in a bowl and top Step 4.

Tips for cooking

Please adjust the amount of shiro-dashi to your liking. When you boil the tomatoes, the skin will peel quickly in about 10~30 seconds, so please take them out of the hot water once it's peeling. The amount of hot water should be enough to cover the tomatoes.
