This is a recipe for a very simple fried udon with a good flavor of Japanese-style soup stock (dashi). You can easily make it in a short time because you just need to quickly stir-fry the chopped ingredients. You can use different ingredients such as vegetables and meat of your choice, so you should definitely give it a try, especially when preparing lunch or dinner.

  • Udon

  • Pork belly
    100 g
  • Cabbage
    100 g
  • Bean sprouts
    100 g
  • Carrot
    30 g
  • Chinese chive
    30 g
  • (A)Cooking sake
    1 tbsp
  • (A)Soy sauce
    1 tbsp
  • (A)Japanese style granulated soup stock
    1 tsp
  • Sesame oil
    1 tbsp
  • Toppings
  • bonito flakes
    as needed

How to make

  1. Prepare. Peel the carrots.
  2. 1. Roughly chop the cabbages. Cut carrots into thin strips. Cut Chinese chive into 4cm wide pieces.
  3. 2. Cut pork belly into 3cm wide pieces.
  4. 3. Add sesame oil to a pan heated over medium heat, add the pork belly from Step 2 and stir-fry until the color changes. Add the ingredients prepared in Step 1, bean sprouts, and stir-fry until the pork belly is fully cooked and the cabbage becomes wilted.
  5. 4. Add udon noodles, ingredient(A) and stir-fry over medium heat until the udon noodles become loosened and the flavors are absorbed, then remove from the heat.
  6. 5. Serve on a plate, Sprinkle bonito flakes and it is ready!

Tips for cooking

You can also use the vegetables of your choice to make it delicious. You can substitute sesame oil with cooking oil.
