  • Pork shoulder

  • Hot water

  • Radish sprouts
    70 g
  • Red cabbage sprouts
    10 g
  • Japanese ginger (Myoga)

  • Grated Daikon Radish and Mentaiko
  • Daikon radish
    100 g
  • Spicy pollack roe
    40 g
  • Sauce
  • Ponzu sauce
    1 tbsp
  • Sesame oil
    1 tsp
  • Roasted white sesame seeds
    1 tsp

How to make

  1. Prepare. Peel the daikon radish. Remove spicy pollack/cod roe (mentaiko) from the skin.
  2. 1. Cut off the roots of the radish sprouts and red cabbage sprouts. Shred the Japanese ginger (myoga). Mix together in a bowl.
  3. 2. Make the mentaiko with grated daikon radish. Grate the daikon radish and drain off the water. Put the mentaiko with grated daikon ingredients in a bowl and mix together.
  4. 3. Make the sauce. Put the sauce ingredients in a separate bowl and mix well.
  5. 4. Boil the pork shoulder in boiling water for about 2 minutes until cooked through, then cool it under running water and drain off the water.

Adjust the seasoning of the sauce to your liking. Pork shoulder can be substituted with pork belly or pork loin.
