Carbonara but with udon noodles! The egg yolk often becomes lumpy and it is easy to fail when making regular carbonara, but if you mix the ingredients in a bowl beforehand, you don't have to worry about that happening! Of course, you can make using spaghetti in the same way. The cheese and egg yolk intertwined with udon noodles tastes very delicious. It is easy to make, so you should definately try it!

  • Udon

  • Hot water
    1000 ml
  • Garlic

  • Shimeji mushrooms
    1/3 package(s)
  • Thin-sliced half sized bacon
    4 sheets
  • (A)Egg yolk
    1
  • (A)Milk
    50 ml
  • (A)Whipping cream (Heavy cream)
    50 ml
  • (A)Powdered cheese
    1 tbsp
  • (A)Salt
    a pinch
  • Olive oil
    1 tbsp
  • Finishing
  • Black pepper
    as needed

How to make

  1. 1. Put udon noodles in boiling water and boil according to the description on the package, and cool it in running water.
  2. 2. Remove the hard tip from the shimeji mushrooms and loosen them up. Peel the garlic, cut it in half and crush it by pushing it down onto the cutting board. Cut thin-sliced half bacon into 2cm wide pieces.
  3. 3. Mix ingredient (A) in a bowl, then add the drained noodles from Step 1, toss around to coat.
  4. 4. Heat olive oil in a pan and garlic from Step 2 over medium heat. Take out the garlic when it becomes fragrant.
  5. 5. Add thin-sliced half bacon from Step 2 and stir-fry over medium heat. When it becomes crispy, add the shimeji mushrooms from Step 2 and stir-fry until it is cooked through.
  6. 6. Add the noodles and sauce prepared in Step 3 and stir-fry quickly over low heat. When everything has thickened and cooked through, remove from heat and serve on a plate.
  7. 7. Sprinkle some black pepper it and it's done!

Tips for cooking

You can adjust the amount of salt to your liking. Please refer to the instructions on the package for boiling udon noodles. For senior citizens, children under the age of 2, pregnant women, and individuals with weakened immune systems, please avoid eating raw eggs.
