Jack-O’-Lantern Trout Sushi (Masuzushi) for Halloween - Recipe Video

A simple and easy to understand recipe video shows how to make Jack-O’-Lantern Trout Sushi (Masuzushi) for Halloween.
This is a mini size version of Toyama's famous trout sushi (masuzushi) for Halloween. You can make it with sashimi salmon that you can get at the supermarket. This dish is perfect for parties, so please take this opportunity to make it.

Ingredients
2 pieces (9cm diameter cercle mold)

  • Sushi Rice
  • Rice
    300 g
  • Sushi vinegar
    30 ml
  • Salmon trout
    150 g
  • Salt
    1/3 tsp
  • Vinegar
    as needed
  • (A)Vinegar
    50 ml
  • (A)Sugar
    1 tbsp
  • (A)Salt
    2 three finger pinches
  • Nori seaweed
    as needed

How to make

  1. Prepare. Cut the nori seaweed into the shape of eyes and mouth.
  2. 1. Slice the salmon trout thinly, sprinkle with salt, and leave it for about 5 minutes.
  3. 2. When the salmon is dry, pat it dry with a paper towel, then soak in vinegar and rinse.
  4. 3. Mix ingredient (A) in a bowl, add Step 2, cover with plastic wrap, and refrigerate for about 30 minutes.
  5. 4. Add sushi vinegar to the rice and mix as if cutting.
  6. 5. Place drained Step 3 and 4 on a cercle mold covered with plastic wrap, and cover with plastic wrap, then press down to adjust the height.
  7. 6. Refrigerate, top with nori seaweed and it is ready.

Tips for cooking

If you slice the salmon thinly, you can get a beautiful finished dish. If you sprinkle salt and marinate in vinegar, the smell of the salmon will disappear and it will have a nice salty and sour taste. Please use warm rice so that the sushi vinegar (vinegar used for sushi rice) will soak in easily.
