  • Kelp (Kombu)
    3 g
  • Water
    1 tbsp
  • Ginger
    5 g
  • (A)Vinegar
    2 tbsp
  • (A)Soy sauce
    1 tbsp
  • (A)Sliced Japanese chili peppers (Takanotsume)
    1/2 tsp

How to make

  1. Prepare. Peel the ginger. Damp the kelp (kombu).
  2. 1. Put the kombu and water in a tray and soak it for about 15 minutes until the kombu is soft.
  3. 2. Cut Step 1 into 0.4-inch width pieces. Cut the ginger into thin strips.
  4. 3. Transfer to a bowl, mix in the ingredient (A), cover with a plastic wrap, and marinate for about 15 minutes until the flavors are absorbed.
  5. 4. Transfer to a plate and it's ready to serve.
