1 whole cake (10-inch width x 2-inch length x 2-inch height pound mold)

  • Mascarpone cheese

  • Granulated Sugar

    100 ml
  • Caramel Sauce
  • Granulated Sugar
    100 g
  • Water
    50 ml
  • Hot water
    30 ml
  • Boiling water
    as needed
  • Mint
    as needed

How to make

  1. Prepare. Leave mascarpone cheese and beaten egg at room temperature. Preheat the oven to 150°C.
  2. 1. Make the caramel. Heat the water and granulated sugar in a saucepan over medium heat and remove from the heat when the granulated sugar melts and turns brown. Add hot water, mix, and pour into the mold.
  3. 2. Make the pudding (purin) mixture. In a bowl, whisk together the mascarpone cheese and granulated sugar until smooth.
  4. 3. Add the beaten eggs in three batches, mixing each time. After mixing well, add the milk and whipping cream (heavy cream), mix, and pour into Step 1.
  5. 4. Place on a deep tray and pour boiling water to a height of about 1/2. Bake in a hot water bath at 150°C (300°F) oven for about 40 minutes, cool and refrigerate for 60 minutes.
  6. 5. Remove from the mold and cut into bite-size pieces. Serve on a plate, garnish with mint and it is ready.

Tips for cooking

Please make sure to preheat the oven before baking. If the oven does not have a preheating function, set the temperature and heat for 10 minutes before baking. The strength of the heat may vary depending on the type of oven and the period of use. Please make sure to follow the recipe as a guide but adjust the baking time as needed. If it browns too much, cover it with aluminum foil. We used a heat-resistant rubber spatula. Please use a heat-resistant one, as it may melt.
