  • (A)Japanese Mayonnaise
    3 tbsp
  • (A)Condensed milk
    1.5 tbsp
  • (A)Lemon juice
    1 tsp
  • (A)Egg yolk
    1
  • (A)Salt and pepper mix
    1 three finger pinch
  • Frying oil
    as needed
  • Mizuna mustard greens
    30 g

How to make

  1. Prepare. Cut off the base of mizuna mustard greens and cut into 1-inch wide pieces.
  2. 1. Remove the shell and tail of the shrimps, and cut the back with a knife to remove the back cotton.
  3. 2. Add Step 1, starch for preparation, and water to a bowl, and rub well. Rinse under running water and pat dry with a paper towel.
  4. 3. Add ingredient (A) in a bowl and mix together.
  5. 4. Add the batter ingredients and Step 2 in another bowl and mix together.
  6. 5. Pour 1-inch depth of frying oil into a pan, heat to 170℃ (340°F), and add Step 4. Deep-fry for about 5 minutes until cooked through and lightly colored, then drain the oil.
  7. 6. Add into Step 3, toss well, serve on a plate covered with mizuna mustard greens, and it's ready to serve.
