  • Japanese yam (Nagaimo)
    150 g
  • Maitake mushroom
    100 g
  • (A)Soy sauce
    1.5 tbsp
  • (A)Cooking sake
    1 tbsp
  • (A)Japanese sweet cooking wine (Mirin)
    2 tsp
  • (A)Grated garlic
    1 tsp
  • (A)Salted butter
    10 g
  • Salad oil
    1 tbsp
  • Young green onion (Konegi)
    as needed

How to make

  1. Prepare. Peel the Japanese yam (nagaimo). Cut off the stems of the maitake mushrooms.
  2. 1. Cut the nagaimo into bar rectangles. Break up the maitake mushrooms with your hands.
  3. 2. Cut the salmon into bite-size pieces, place in a bowl, add the starch, mix and coat.
  4. 3. Add cooking oil to a pan heated over medium heat, add Step 2 and fry for about 5 minutes until cooked through.
  5. 4. Add Step 1 over medium heat and stir-fry the maitake mushrooms until cooked through, then add ingredient (A) and stir-fry until the flavors are absorbed.
  6. 5. Remove from heat, place in a dish, sprinkle with young green onions (konegi) and it is ready.

Tips for cooking

Adjust the amount of soy sauce to your liking. You can substitute other mushrooms such as shimeji mushrooms and eryngii mushroom for maitake mushrooms.
